Ingredients
- 200g Blue Bird Spaghetti
- 1 Large Avocado, Peeled and Cut
- 1/2 Cup Fresh Basil Leaves, Chopped
- 2 Cloves Garlic, Crushed
- 1 Tablespoon Lemon Juice
- 1 Teaspoon Olive Oil
- 1/2 Teaspoon Black Pepper
- Salt (To Taste)
- Red Chili Flakes (To Garnish)
- Cherry Tomatoes (To Garnish)
- Parmesan Cheese (To Garnish)
Directions
- Cook the pasta according to the package instructions stirring occasionally, until al dente or softer according to the desired texture and keep it aside
- Put the avocado, lemon juice, oil, garlic, basil leaves, salt, pepper, water into a food processor and blend until smooth. Start with ¼ cup of water and then add more as needed to get the desired consistency.
- In a large bowl, combine pasta and avocado sauce. Garnish with Parmesan Cheese, Cherry Tomatoes and Chili Flakes.
